At On Jeong Ok, the hand-grilled galbi sits at the center, but the entire flow of the meal — warm broth, thoughtful side dishes — is built around it. Rice with Suhyangmi, our soft and deep perilla-butter Sujebi, the bright squid muchim that lifts the palate — all familiar at first glance, all set to our own temperature.
